As a cook all I want to do is share my dishes and recipes with you so you can make great Indian food simply. I think cooking should be fun, and full of love so you enjoy making the food - let's make it, love it and share it together.
Teaching others is about sharing a few secrets and inspiring you to try something new. I'm hoping these videos will do just that - from demystifying spices, exploring new recipes and making Indian food fun and amazing for you, you are more likely to give it a go.

Hari Cooking With Winny
Jamaican Chicken Curry cooked with Winny from Winny's Kitchen
You know how I love collecting curry dishes from around the world - well this one is from Jamaica and a wonderful lady called Winny showed me how to make it. She was born in the UK but grew up in Jamaica until she was about 14 years old. She then came back and brought with her her mum and grandma's dishes which she luckily has been able to pass on to her children.
Her son now runs a business called Winny's Kitchen selling Jamaican ready meals and I was fortunate enough to cook with Winny and learn some of her secrets to recreate this delicious cuisine. Check out their website - www.winnyskitchen.com/
Ingredients
1 whole chicken, cut into pieces or 8 pieces of chicken on the bone, skinned
Marinade
1 tsp salt
1 tsp ground black pepper
1 tsp all purpose seasoning
1 tsp chicken seasoning
1 tsp curry powder
Curry
2 tbsp vegetable oil
3 spring onions
1 medium onion
4 springs of fresh thyme
3 garlic cloves
1 whole scotch bonnet pepper
2 tsp curry powder
1 large carrot, 5cm chunks
2 potatoes, 5cm cubes
Method
1. Mix the marinade ingredients and rub all over the chicken pieces, leave to one side for a couple of hours.
2. Heat vegetable oil in a saucepan over medium heat, adding garlic, onion, spring onion and scotch bonnet pepper and stir for 3 minutes.
3. Add 2 tsp of curry powder and cook for further 5 minutes.
4. Add marinated chicken and brown for 10 minutes, turning chicken and browning for a further 5 minutes.
5. Add carrots and potato with a cup of water and cook through until the vegetables are tender.

For those with no restriction on eating pork, I can highly recommend boiling off a smoked ham hough first, then use some of the stock to boil the lentils. shred the meat and add some to the finished dahl. Smoked ham and red lentils are a perfect combination, even if it's not traditional to indian cuisine.

Hey, The word "vindaloo" is a mispronunciation of the Portuguese phrase carne de vinha d'alhos, which means "meat marinated in wine-vinegar and garlic". आलू तो प्लीज नहीं..... आलू वे लोग लहसुन को बोलते हैं.. Thank you for sharing this. I lived mainly on the brown lentils for years. I just cooked them with onions, peanuts and soy sauce. Average Americans dont know how to cook, how to use spices. I admire Indian farmers and cooks. Lately I discovered red lentils and yellow ones or peas? They stay red when I cook them, however. ?

As someone who lives on an island, I can answer most of these questions. Enzymes cut proteins and so the idea is to use the papaya enzyme to cut the proteins of any kind of meat (beef, chicken, lamb) to tenderize it. The Papaya skin (use any variety of papaya you can find) has more enzyme than the insides (a lot more) and a green Papaya will have more enzyme in both insides and skin than a ripe one. But all of it in any degree of ripeness will have at least some enzymes (though the insides of a very ripe one will have relatively little enzymes). The enzymes will work best to tenderize the meat at room temperature, but obviously meat spoils, so you should cook it right away and make sure the outsides are cooked thoroughly. Once the tenderizing process is complete, you would generally wash off/shake off/scrape off the papaya if it is all you used, but all of it is edible, so leaving it on won't hurt: some people will mix a marinade in with the papaya, apply it to the meat and then cook without removing it.
